Chicken Fajita Tacos

Tacos are life! In my opinion the 3 major food groups are Tacos, Pizza & BBQ. Since it is Tuesday, I figured it was a perfect time for Chicken Fajita Tacos. Here's what we did:

HEB seasoned chicken fajitas
1 small white onion, sliced
1 shallot, sliced
6 white/button mushrooms, sliced
2 tablespoons butter
1⁄2 tablespoon HungryHeath SPG blend
1⁄2 cup beef broth
1 shot Evan Williams Bourbon Whiskey
HungryHeath Tex-Mex Sauce
La Rancherita flour tortillas
Shredded cheese

Step by step directions:

Melt butter in a cast iron skillet.

sliced onion, shallot, & mushrooms

Add onions & shallots cook for about 2 minutes. Then add mushrooms & season with HungryHeath SPG blend

add beef broth 
stir well

Cover, reduce heat, and simmer about 10 minutes.
Add Bourbon and cook until the sauce is slightly reduced.

grill chicken over medium low heat
cook until internal temp reaches 165°
heat up the tortillas
cooked chicken
sliced chicken
dinner is served
