Crawfish Mac N Cheese

A little over a year ago, I saw some tv show where they made a rather interesting dish. It got my creative juices flowing & lead me to create this glorious concoction. Ladies and gentlemen I give you Crawfish Mac N Cheese! (originally created on Monday April 25, 2016)

12 ounce frozen crawfish tails
8 ounce Longhorn style Colby cheese
8 ounce Monterey Jack cheese
6 ounce bacon bits
16 oz macaroni noodles
1/2 cup shredded Mexican cheese blend
1 jalapeno, seeded & diced
1 bottle of beer
12 ounce cream cheese
2 cups shredded cheese
Goldfish crackers
Chipotle powder*
    *to taste, adjust as needed

preheat oven to 350° & slice jalapeno

remove seeds & ribs


run both blocks of cheese thru food processor

add bottle of beer to large pot

add cheese & dry seasonings to beer. cook until thickened

spray casserole dish

cook noodles as per directions

stir well to remove lumps

grind Goldfish crackers to create crumbs

grind Goldfish crackers to create crumbs

add noodles to large mixing bowl

pour beer cheese onto noodles

add remaining items to mixing bowl & stir to combine

transfer mixture to casserole dish

top with shredded cheese

add cracker crumbs & bake for 30 minutes or until golden brown
