Semi Homemade Pizza

It's been a long week, so we wanted something quick & easy for dinner. Tuesday, we made chicken fajita tacos. We chose to use some of the left overs to make semi homemade pizzas. The first is chicken, pineapple & pepperoni. The second is pepperoni & mushroom. In my opinion, the flavors on both of these pies blend exceptionally well together.

Here's what we did:
mise en place
2 Mama Mary's pizza crusts
HEB seasoned chicken fajitas
White/button mushrooms, sliced
Pepperoni slices
Mozzarella slices
Shredded Parmesan cheese
King Arthur pizza seasoning (not pictured)

Pizza Sauce
2 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 tablespoon ground oregano
1 tablespoon salt
1 tablespoon sugar
1 1/2  teaspoons garlic powder
1 teaspoon ground paprika
1/8 teaspoon red pepper flakes

add sauce & paste to pan
add seasoning
stir well to combine ingredients
simmer on low while completing rest of dish
add extra virgin olive oil as directed on package
add pizza sauce
add pizza seasoning
I wanted to use up this pack of cheese
add cheese to both pies
slice leftover chicken
add sliced chicken to 1 pizza
add pineapple
slice shrooms
add to 2nd pie
add pepperoni to both pies

top with Parmesan cheese
we decided to do cheese sticks too
bake at 450° for 10 minutes
fresh out of the oven
Dr Pepper pairs nicely with pizza

I will freeze leftover pizza to have next week for lunch.
