Tex-Mex Pulled Pork


Pork shoulder is wonderful when smoked over a wood fire. It creates excellent pulled pork for tacos, enchiladas, burritos, sandwiches, etc. My wife enjoys my Tex-Mex version better than the standard BBQ pulled pork. There is no set recipe as I just use what ingredients I have on hand. I normally buy pork shoulders when they are on sale. This is a compilation of different cooks I have done.

gather your fuel & start the fire
various injection ideas
Injection:
2 tall shots lemon lime soda
1 tall shot tequila or moon shine
1/2 tsp fajita seasoning


start by injecting the butt
HungryHeath taco seasoning*   
apply taco seasoning then marinate for 4 hours
into the smoker for around 8 hours at 225°- 250°
smoke until internal temperature reaches 205°

wrap in a towel & place into a cooler for at least 1 hour
once rested, pour off juices
save juices
shred & add juices as needed to keep moist
now you're ready to plate
tacos are life
top with your favorite salsa
makes great sammiches too!
