Creating 3 meals from 1 chuck roast

Since it just my wife & I, we try to make multiple meals out of 1 meat. This time we used a 3 lbs chuck roast to first make Beef Stroganoff, then the second half for a Yankee Pot Roast. We ended up having enough leftover from the pot roast that Shelly was able to take them to her mother's house. It should provide four more servings.
I actually got this on sale, not for $20

I started off by cutting the 3 lbs chuck roast in half. This was not a precise cut. I just eye balled it. 

apply generous amount of HH beef rub & let marinate in fridge
I trimmed off most of the fat. Cooked it to grease my skillet & saved it for my dog.

Next, I set about gathering my ingredients for the Beef Stroganoff:

1.5 lbs chuck roast, cubed
1/2 large onion, sliced
8 oz button mushrooms, sliced
1 heaping Tbsp flour
3 cloves garlic, minced
1/2 cup white cooking wine
2 cups of beef broth
3 Tbsp sour cream
1 lbs egg noodles
mise en place
begin by coking the beef until browned
cut vegetables
remove beef, once cooked
sauté onions (& mushrooms not pictured)
add flour
add garlic
add white cooking wine
add beef broth
add beef & bring to a boil
cover & simmer on low for 1 hour
after 1 hour, check to see if beef is tender
begin boiling noodles
boiled egg noodles
add sour cream
plate & enjoy

Now for the Yankee Pot Roast. This was extremely easy, thanks to my new favorite kitchen gadget, the Instant Pot. I love, love, LOVE the Instant Pot. This thing is AWESOME. There are so many things it can do. I feel like I have just scratched the surface of what it is capable of. Check this out....

Ingredients:
1.5 lbs chuck roast, whole
1.5 lbs baby dutch yellow potatoes
4 cups mirepoix
1 package onion mushroom soup mix
1 cup of beef broth
1 bottle of beer
olive oil


mise en place
add a little olive oil
sear roast on all sides & set aside
add potatoes
add mirepoix
return roast to pot
add soup mix
add beef broth
add beer
position roast to set further into liquid
set to slow cook for 8 hours
after 8 hours
removed roast
roast & tators

decided to thicken gravy (whisked in 3 Tbsp)
time for dinner
