Atomic Buffalo Turds - 2.0 (new & improved)

I can never seem to stop tinkering with an already confirmed winning recipe. As good as my original Atomic Buffalo Turds are, this new version is even better. I have upgraded the cheese & found a quicker, easier way to cook these glorious snacks.

As before, there is no real "recipe" per say. There are only four ingredients:

Fresh jalapenos
Thin cut bacon

Goat cheese
Seasoning of your choice

Step one, is to cut the jalapenos in half & remove the seeds 

Step two, is to fill each pepper with the goat cheese. My favorite brand is made by The Dapper Goat Dairy. I love that they are small local farm that makes an incredible product. 

Step three, is to wrap each pepper in a slice of bacon. 
I like to pin it in place with a tooth pick. I find that this helps keep the bacon from unraveling as it tends to shrink a little as it cooks. I also take this time to season the peppers. For this batch I chose to use Sonny Salt. I discovered this tasty blend at The Arcade Restaurant during a road trip through Memphis, Tennessee.

Now it's time to cook these beauties...
I toss them into my Gourmia air fryer for 10 mins at 390°

While the peppers are cooking, I started on making a raspberry chipotle dipping sauce.

12 oz of raspberries (2 - 6 oz packs)
1 small red jalapeno, sliced in half
1 tablespoon fresh lemon juice
1/4 cup water
1 tsp chipotle powder
1/2 tsp xanthan gum

1. Add everything to blender & pulse until smooth. 
2. Pour into jar for storage.

I also used 1/3 cup of red wine vinegar + 1/3 cup water to rinse the out blender. I think this will be a good marinade for chicken wings.

3. Wrap in bacon & season
4. Cook in air fryer for 10 mins at 390°
5. Enjoy
